Oatmeal Cookies Filled with Dates Substitute Splenda for white sugar, and substitute brown sugar Splenda for brown sugar to reduce additional calories

Recipe Ingredients for Date Filled Cookies

1 cup shortening
2 teaspoons baking powder
1 cup splenda (brown sugar)
1/2 cup brown sugar
1/2 teaspoon salt
2 eggs
1 teaspoon baking soda
4 cups flour
1/4 cup milk
1 cup rolled oats
2 teaspoons vanilla
2 cups chopped dates
1/4 cup flour
1 cup splenda
1 cup water

Recipe Directions for Date Filled Cookies

  1. Cookies

  2. Cream shortening and sugar together

  3. Add vanilla

  4. Add eggs and beat until fluffy

  5. Sift flour

  6. Measure and add salt, soda and baking powder

  7. Sift again and add rolled oats

  8. Add dry ingredients alternately with milk

  9. Mix thoroughly

  10. Chill dough in refrigerator for several hours

  11. Roll out on lightly floured board to .25" thickness

  12. Cut with round cutter and spread with the filling:

  14. Combine sugar and flour and add to chopped dates

  15. Add water and stir until smooth

  16. Cook until thickened, stirring constantly

  17. Put a teaspoon of the filling on top of each cookie

  18. Cover with another piece of dough and fasten edges securely

  19. Place 1" apart on greased cookie sheet and bake at 375 degrees until golden brown

  20. Makes 2.5 to 3 dozen cookies
