Modified recipe using molasses instead of sugar, egg whites instead of whole eggs, applesauce to replace some of the margarine, and oatmeal to replace some of the flour. Omitted the nuts. Optional, add almond flavoring.

Recipe Ingredients for Date Cookies

1/2 cup molasses
1/4 cup margarine
1/2 cup applesauce
2 tbsp milk
1 tsp vanilla
3 egg whites
3/4 cup white flour
2 cups oatmeal
1 tsp baking soda
1 tsp baking powder
1/2 cup pitted dates, chopped

Recipe Directions for Date Cookies

  1. In a large mixing bowl, beat the margarine, molasses and applesauce together until well mixed. Add the milk, vanilla and egg whites. In a separate bowl, sift the flour with the baking soda and baking powder. Gradually add the flour mixture to the molasses-egg mixture. Lastly, stir in the chopped dates and oatmeal.

  2. Drop rounded teaspoons full of dough about 2 inches apart unto an ungreased baking sheet. Bake in a 375 degree oven or until the cookies' edges are lightly browned. Cool the cookies on a wire rack. Enjoy!
