Recipe Ingredients for Date Bread

1 cup dates, chopped & pitted
1 tsp baking soda
1 cup boiling water
1 1/2 cup whole wheat flour
1 tsp salt
1 tsp baking powder
1 cup sugar
1 tbsp shortening
1 egg

Recipe Directions for Date Bread

  1. Spray loaf pan with non-stick spray. Set aside.

  2. In a small bowl combine dates, baking soda and boiling water. Let stand while you prepare the rest of the batter.

  3. Sift together flour, salt & baking powder.

  4. Cut shortening and applesauce into the sugar, then mix into the other dry ingredients.

  5. When dates are cool, add them to your flour mixture, add your egg and mix until just smooth. Fold in pecans if you choose to use them.

  6. Bake at 350 for 45 minutes or until loaf test comes out clean. Remove from pan & cool on a wire rack.
