Recipe Ingredients for Date Bars

2 cups dates, cut up
1 cup water
1 1/2 cups oatmeal
1 cup oat flour
1 cup whole-wheat flour
1 cup brown sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/3 cup butter, melted
1/4 cup water

Recipe Directions for Date Bars

  1. in a saucepan, bring dates and 1 cup water to a boil over med-high heat. reduce heat to low and simmer until dates and water become a thick jam (about 5 min). set aside to cool.

  2. preheat oven to 375 degrees. spray a 9x13 inch pan with nonstick spray. in a large bowl, combine oatmeal, flours, brown sugar, baking soda and cinnamon. using fingertips, mix butter into flour and oat mixture. add the 1/4 cup water, a bit at a time, until the mixture barely hold together when pressed in your hand but ist still crumbly.

  3. place 3 cups of the crumbs in prepared pan and press to firm. spread date mixture over the top, and top with remaining crumbs. bake for 25 minutes.
