This great tuna salad is just right for 1 sandwich. All you will need will be 2 slices of a healthy whole wheat or sprouted wheat bread and lettuce.

Recipe Ingredients for Dar's Tuna Salad

4 oz tuna, light, without salt, packed in water, drained
1/4 cup Natural Cheese
1 T mayonnaise, reduced fat olive oil
1 oz Greek yogurt, plain, nonfat
2 jumbo Spanish Olives
2 T onion, chopped
2 T celery, chopped
1/2 tomato, roma, chopped
1/4 avocado, chopped
1 T red bell pepper, chopped
1 pepper pepper jalapeno
2 t sweet relish
1 dash thyme, dill, black pepper (to taste)

Recipe Directions for Dar's Tuna Salad

  1. finely dice: onion, celery, tomato, avocado, red bell pepper, olives and jalapeno

  2. add to small bowl

  3. drain and add tuna

  4. add cheese, mayo, yogurt, and relish

  5. mix it all up in small bowl

  6. add thyme, dill, and black pepper (to taste)

  7. serve over bed of greens, or in sandwiches
