Delicious dark chocolate souffle from London Times

Recipe Ingredients for Dark Chocolate Souffle

115 g dark chocolate
4 egg yolks
6 egg whites
2 tbsp caster sugar
2 teaspoons butter, grease pan
1/8 cup sugar, confectioner's for dusting top

Recipe Directions for Dark Chocolate Souffle

  1. Preheat the oven to 200C/400F/Gas Mark 6 (or 180C/350F/Gas Mark 4 if fan-assisted). Butter four 250ml soufflé dishes. Break the chocolate into pieces and place in a bowl over a pan of freshly boiled water. Leave to melt: you can always replenish the boiled water if necessary. Beat the egg yolks thoroughly, then stir in the melted chocolate.

  2. In a separate, dry bowl, whisk the egg whites until they form soft peaks. Add the sugar and continue to whisk until the mixture makes stiff, glossy peaks. Add two dollops of whipped egg white to slacken the chocolate mixture, then gently fold in the remaining whipped egg white. Immediately divide the mixture between the four soufflé dishes and place in the oven.

  3. Bake for 8 minutes or until the soufflés have risen, but are still gooey in the centre. As soon as you remove them from the oven, dust with icing sugar and serve immediately.
