Chocolate guiltless snack. We keep these on hand all the time! Award winning recipe from Cooking Light. Strange ingredients, but the outcome is awesome!

Recipe Ingredients for Dark Chocolate Mini Muffins

1 1/4 cups all-purpose flour
3/4 cup whole wheat flour
1/4 cup Splenda
1/4 cup brown sugar
3 tbsp unsweetened cocoa powder
1 1/2 tsp baking soda
3/4 cup skim milk
3/4 cup unsweetened applesauce
1 tblsp canola oil
1 tblsp molasses
2 tsp balsamic vinegar
1 tsp vanilla
1/3 cup semisweet chocolate (mini)

Recipe Directions for Dark Chocolate Mini Muffins

  1. Preheat oven 350 and coat mini muffin pan with non stick spray. In a bowl combine flours, sugars, cocoa powder, soda, 1/4 tsp salt. Make a well in center of flour mixture; set aside. In another bowl combine milk, applesauce, oil, molasses, vinegar, and vanilla. Add to flour mixture. Stir just until moisetened (lumpy). Stir in 1/2 of the chocolate pieces.

  2. Spoon batter into prepared muffin cups (refrigerate dough between batches) and sprinkle with remaining chocolate pieces. Bake 8-10 minutes for mini muffins, or 15 minutes for regular muffins. Cool in pan on rack for 5 minutes. Remove and serve warm. Or cool completely; wrap tightly and freeze up to 3 months.
