Recipe Ingredients for Dark Chocolate Chip Zucchini Muffin

2 cups whole wheat flour
3/4 teaspoon salt
3/4 teaspoon baking soda
3/4 teaspoon baking powder
2 teaspoons ground cinnamon
2 eggs
2/3 cup unsweetened applesauce
2 teaspoons vanilla extract
2 cups grated zucchini
100 g dark chocolate chips
1 1/2 cup In the Raw Zero Calorie Sweetener

Recipe Directions for Dark Chocolate Chip Zucchini Muffin

  1. Grease and flour muffin pan. Preheat oven to 350 degrees F (165 degrees C).

  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

  3. Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and chocolate chips until well combined. Pour batter into prepared pans.

  4. Bake for 20-25 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 10 minutes. Remove muffins from pan, and completely cool.
