Recipe Ingredients for Dan's Breakfast Medley

1 1/2 c Egg Beaters, Original
3 bacon, slices,crumbled
1/8 c peppers, red, diced
1/8 c peppers, green, diced
1/8 c peppers, yellow, diced
1/4 c onion, diced
1/2 c potatoes, hash browns
1/4 tbsp olive oil

Recipe Directions for Dan's Breakfast Medley

  1. Brown bacon in skillet until crisp, remove and drain. Crumble when cooled.

  2. Remove oil and wipe dry with a paper towell.

  3. Dice all your vegetables and set aside.

  4. Heat olive oil in skillet on medium high heat.

  5. Add hash browns and brown slightly.

  6. Add vegetables and cook until tender. Add Bacon crumbles.

  7. Set vegetable mixture aside.

  8. Add Egg Beaters to the skillet on medium heat and cook until almost done.

  9. Remove from heat.

  10. Stir in vegetable and bacon mixture.
