Sauteed cabbage, bacon and courgettes over a romaine salad.

Recipe Ingredients for Danny's Favorite Salad

8 Rasher Bacon
1 head, large (about 7" dia) Cabbage
2 head Lettuce, Cos Or Romaine
20 ea. Raw Tomato Cherry
1 small Onions
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 cucumber (8-1/4") Cucumber
3 medium Squash, Summer, Zucchini, Includes Skin
2 tbsp Vegetable Oil
2 tbsp Pepper, Black
2 tsp Sea Salt

Recipe Directions for Danny's Favorite Salad

  1. Slice the courgettes and sautee in oil. Season with sea salt and pepper.

  2. Meanwhile, roughly chop the romaine, halve the cherry tomatoes, cut the onion in half and slice finely, deseed the pepper and julienne.

  3. Layer the ingredients in a large salad bowl, courgettes on top. Dice the bacon, and shred the cabbage. Fry in a large pan with 1 T oil. When the cabbage is soft, season with black pepper and a bit of sea salt. While hot, mix in with the cold vegetables and serve.
