A combination of 2 of favorite salads

Recipe Ingredients for Danica's Greek Salad

3 oz spinach leaves
1 cup grape tomatoes, sliced and seeded
1/4 cup purple onion, thinly sliced 1 cup cucumber, sliced and quartered
1/4 cup capers (without juice)
1/4 cup feta cheese, crumbled
1/4 cup extra virgin olive oil
3 tbsp red wine vinegar
1 tsp dried basil
1 tsp dried oregano
1/8 tsp black pepper

Recipe Directions for Danica's Greek Salad

  1. Soak onion in vinegar & water for about 15 min.

  2. Sprinkle cucumber with salt, let sit for 15 min., then drain.

  3. toss first 6 ingredients together

  4. whisk together olive oil, vinegar, basil, oregano, and pepper and toss with salad
