Dangerously Nutritious No-Knead White Bread

Recipe Ingredients for Dangerously Nutritious No-Knead White Bread

3 cups wheat flour, unbleached
2 cups Wheat Bran, Crude
1/4 tsp yeast
1 tsp salt
4 tsp vital wheat gluten
1 1/2 cups water

Recipe Directions for Dangerously Nutritious No-Knead White Bread

  1. Mix all dry ingredients well in a large bowl.

  2. Mix in water until just combined (do not knead)

  3. Cover with plastic wrap or towel and set aside in a warm place for 12 to 15 hours.

  4. Spread about 1/2 cup wheat bran in the center of a kitchen towel and dump dough on top of bran to prevent sticking

  5. Using your towel lift and fold dough over on itself right to left and then top to bottom.

  6. Again using the towel, flip the dough upside down onto the towel.

  7. Fold the sides of the towel up and over to cover the dough.

  8. Let rest for 2 hours.

  9. Preheat a glazed clay or cast iron pot with tight fitting lid in the oven to 450-500 degrees F for 30 minutes.

  10. Remove hot pot (carefully!!) from the oven remove lid (also carefully!!)

  11. Again using the towel, flip the dough down side up onto your hand.

  12. Carefully drop the dough down into the hot pot and replace lid.

  13. Bake covered for 30 minutes lid on and an additional 5 minutes lid off.

  14. Dump loaf out onto wire rack and allow to cool completely.
