A mix of fresh garden vegetables to which you can add simply a salad dressing or anything else. Options, depending on protein requirements are chicken, tuna, beef, mushrooms, cooked ground beef and salsa, etc. I use my imagination and whatever I have to use up in the fridge.

Recipe Ingredients for Dandy Health Salad

6 cups Romaine Lettuce
1/4 cups Green Onion
1 cup Celery
1 cup Red Pepper
1 cup Green Pepper

Recipe Directions for Dandy Health Salad

  1. Tear the Romaine into bite size pieces.

  2. Chop/cut the green onion, celery and peppers into pieces as small as you prefer.

  3. Toss in a large bowl.

  4. I then divide the salad into 6 plastic containers with lids so when I need a salad for lunch every day, it's ready to go. I had been discouraged previously on a lot of days at lunch from having salad because I had to make it every time. Now, it's made and ready to go, so no excuses.
