A stick to your ribs but not your waist stew. A bit spicy but very satisfying. Delicious all on it's own. 1 pot cooking at it's finest!

Recipe Ingredients for DancingLion's Hearty October Stew

1 lb. Brown Rice
1/3 lb collards
6 Carrots, Chopped
1 cup Raisins
4 cups Sweet Potatoes, Chopped
1 lb. Ground Beef or Turkey (Browned & Seasoned with Bar B Que Sauce)
1 Red Onion, Chopped
7 cloves Garlic, Chopped
12 oz Garbanzo Beans
12 oz. Sweet Corn
12 oz Coconut Milk
2 tablespoons Olive Oil
3 tablespoons Ground Cumin
3 tablespoons Curry Powder
2 tablespoons Black Pepper
2 tablespoons Garlic Powder
2 tablespoons Cajun Spice

Recipe Directions for DancingLion's Hearty October Stew

  1. Put all ingredients except coconut milk and browned beef in a large pot.

  2. stir dry to coat all ingredients with spice and oil.

  3. Cover all ingredients with water and bring to a vigorous boil.

  4. Let boil on high for 15 minutes.

  5. Stir well add in Browned Ground Beef and coconut milk.

  6. Cover, reduce heat and let simmer until liquid is mostly gone.

  7. Serve in a bowl with cornbread if desired!
