A warming slightly spicy yummy stew of Veggies. can be served as a main dish or poured over Bulgar wheat, couscous or millet for a hearty meal.

Recipe Ingredients for DancingLion's Coconut Ginger Curry Veggie Stew

2 sweet potato
2 large tomatoes, chopped
1 zucchini, chopped
12 oz Coconut milk
1 tablespoon curry powder
2 tablespoon olive oil
1/4 stick butter
12 oz Garbanzo Beans
12 oz lentils
12 oz Red Beans, Drained
1 Red onion, chopped
2 Carrots
8 oz Kale
1/2 oz Ginger, chopped fine

Recipe Directions for DancingLion's Coconut Ginger Curry Veggie Stew

  1. Melt butter in pot

  2. Stir in chopped garlic, ginger, onions and

  3. simmer until clear.

  4. set to the side.

  5. Boil sliced kale, cubed sweet potato, zucchini, tomato

  6. when veggies are slightly soft add cans of lentils, red beans, & garbanzos

  7. stir in can of coconut milk plus melted butter onions, garlic & ginger

  8. add red pepper to taste

  9. let simmer on low until done.
