Delicious homemade low fat granola from Channel 10's own Dan Eaton

Recipe Ingredients for Dan Eaton's Homemade Granola

2 tbsp butter
1/3 cup maple syrup
1 cup unsweetened applesauce
1 tsp vanilla extract
5 cups old fashioned oats
1 cup sliced almonds
1/2 cup toasted wheat germ
1/3 cup light brown sugar
1 tsp ground cinnamon
1 tsp sea salt
1/2 cup chopped pitted dates
1/2 cup dried cranberries

Recipe Directions for Dan Eaton's Homemade Granola

  1. Preheat the oven to 325 degrees.

  2. Use a small pot to melt 2 Tbs of butter with 1/3 cup honey and, after that has heated up, add 1 cup of unsweetened applesauce, let it warm up a bit, add 1 tsp vanilla extract and turn the heat off.

  3. Next, use a large mixing bowl to combine 5 cups of old fashioned oats, 1 generous cup of sliced almonds, 1/2 cup regular wheat germ, 1/3 cup light brown sugar then add 1 tsp ground cinnamon, 1 tsp kosher salt and toss everything together.

  4. Add the applesauce mixture to that and toss it around until everything is well coated.

  5. Spread everything out into a thin layer on a large, heavy bottomed baking tray and place that onto the center rack of the preheated oven.

  6. That will take just about 45 minutes to bake and you'll want to stir it around every 10 minutes or so while that is happening.

  7. Make sure you are pulling the outside edges of the granola into the center, as you are baking it, it might take a little less than 45 minutes to finish up and it will be a nice golden brown when it is done.

  8. Once it is out of the oven and cooled down, fold in the chopped dates and store it in a tightly sealed container.

  9. HINTS:

  10. If you don't have a heavy bottomed baking tray, stack two lighter gauge trays together to make a heavier tray so that the granola has a chance to toast without burning.
