An Indian student's version of dal. My husband lived on this while he was in school. Sometimes I add frozen veggies, a potato, or chicken to this. Anything extra would be added at the same time as the dal.

Recipe Ingredients for Dal

1 medium onion
1 medium tomato
2 tbsp oil
1 cup lentils, yellow
1 tbsp minced garlic
1 tbsp cumin powder
1 tbsp coriander powder
1 tsp garam masala
2 tsp turmeric powder
1/2 tsp chili powder or to taste
1 tsp salt or to taste

Recipe Directions for Dal

  1. Rinse lentils and soak for about half an hour

  2. Meanwhile slice onions and dice tomato

  3. Heat oil on med-high, add onions when hot and fry until lightly browned. Add garlic and fry another minute or two but don't burn!

  4. Add all the spices and fry, stirring, until fragrant, about 30 seconds to 1 min. A little extra oil may be needed.

  5. Add tomato to the pan and cook until tomatoes are soft and the fresh tomato smell is gone. If it starts sticking to the pan add a little water.

  6. Put the tomato-onion-spice mixture in a pressure cooker and add lentils and enough water to cover with a little extra. Cook until lentils are very soft. Beat with a whisk until smooth or puree in a blender. (If you don't have a pressure cooker they can be simmered, covered, for an hour or more until soft. Make sure they don't run out of water.)

  7. Can be served with fresh Basmati rice or eaten like soup. I like it with half a lime squeezed on top and 1/4 c yogurt.
