Recipe Ingredients for Dakota's Oatmeal Blueberry Orange Muffins

1 c rolled oats
1 c whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tbsp orange rind
1 1/2 c flaked coconut
1/2 c honey
1 egg
3 tbsp olive oil
1 tbsp vinegar
1 c fresh orange juice (add water if needed)
1 c blueberries

Recipe Directions for Dakota's Oatmeal Blueberry Orange Muffins

  1. Preheat oven to 350.

  2. Mix all dry iingredients, in a separate bowl mix all wet, then combine. Fold in blueberries.

  3. Pour batter into muffin cups.

  4. Bake in preheated oven for 20-25 minutes.

  5. Check doneness with toothpick.

  6. Cool on wire rack.
