A delicious dairy-free alternative to pancakes. Extremely light and fluffy.

Recipe Ingredients for Dairy-free Pancakes

1 3/4 cups flour
1 tablespoon baking powder
1/4 teaspoons cinnamon
2 eggs
1 3/4 cups silk light soy milk
1/2 cups unsweetened applesauce

Recipe Directions for Dairy-free Pancakes

  1. In a large mixing bowl (which will ultimately hold your several days worth of waffle mix) stir together flour, baking powder and salt.

  2. In a smaller mixing bowl beat egg yolks. Add Soya milk, cinnamon and oil.

  3. Add to flour mix all at once. Stir or fold til mixed but still slightly lumpy.

  4. In yet-another-bowl whip egg white to form a stiff peak.

  5. Gently fold egg whites into soya-flour-oil mixture leaving a few whisps of egg white visible.

  6. Let batter work for about 7 minutes, then scoop on the preheated griddle.

  7. Makes 7 servings of three pancakes.
