This delicious recipe is dairy-free and if you eliminate the spelt flour and used only brown rice flour and made sure the oats you used were gluten free - this would also be gluten free! These are awesome!!! I think you could even reduce the sugar and they would be better.

Recipe Ingredients for Dairy Free Oatmeal Raisin Cookies with Spelt & Brown Rice Flour

2 cups rolled oats
2/3 cup spelt flour
1/2 cup brown rice flour
1 cup brown sugar
1/2 cup powdered sugar
1/2 cup sugar
1 tsp baking soda
3 tbsp canola oil
2 large eggs, lightly beaten
1 tbsp applesauce
1 tbsp almond milk
1 tsp vanilla extract
2 tsps cinnamon
1 cup raisins

Recipe Directions for Dairy Free Oatmeal Raisin Cookies with Spelt & Brown Rice Flour

  1. 1. Preheat the oven o 375 F. Spray baking sheet with non-stick cooking spray and set aside.

  2. 2. In a large mixing bowl, combine the oats, flour, brown sugar, powdered sugar, baking soda and cinnamon. In another mixing bowl, whisk together the canola oil, eggs, almond milk, applesauce and vanilla extract until combined. Add the wet ingredients to the dry, mixing until just combined. Fold in the raisins and chopped pecans. Drop the mixture on the prepared sheet with a spoon, spacing the cookies about 2 inches from one another. Bake for 8-12 minutes, or until lightly golden brown around the edges. Let cool on a wire cooling rack and serve warm or at room temperature.
