Dairy-Free Apple Upside Down Cake

Recipe Ingredients for Dairy-Free Apple Upside Down Cake

4 large apples
2 eggs
1/2 cup applesauce
1 cup sugar
1 cup canola oil
2 cups whole wheat flour
1/4 cup soy milk
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon cinnamon

Recipe Directions for Dairy-Free Apple Upside Down Cake

  1. Preheat oven to 350 F.

  2. Spread apples evenly in bottom of greased a 9" x 13" baking pan.

  3. In a medium-sized bowl, mix all the dry ingredients.

  4. In a large bowl, beat sugar and eggs. Add oil, applesauce, milk, and vanilla while mixing until smooth. Pour dry ingredients in and mix well.

  5. Pour the batter evenly over the apples and bake for 40 minutes or until a toothpick inserted comes out clean.

  6. Cool completely and then serve as is ? no need to flip it upside down, since I think it looks more appetizing with the cake on top.
