Recipe Ingredients for daily burn potato pancakes

1 cup Gluten Free Pancake Mix
2 cup Milk
2 tsps Butter, melted
1 whole Sweet potato, boiled, skinned, and mashed
1 cup Ricotta cheese
2 whole Eggs, divided
4 tsps Baking powder
1 tsp Cinnamon
1/2 tsp Nutmeg
1 pinch Salt
2 tbsps Brown sugar

Recipe Directions for daily burn potato pancakes

  1. Preparation Instructions:

  2. Separate eggs and set egg whites aside.

  3. In a large bowl, combine ricotta cheese, brown sugar,

  4. egg yolks, sweet potato puree, butter, and milk.

  5. In a dierent bowl, mix gluten-free pancake mix, salt,

  6. nutmeg, and cinnamon.

  7. Whip egg whites until they form sti peaks and set

  8. aside.

  9. Slowly add dry ingredients to the wet ingredients

  10. bowl. The easiest way to do this is to tap the bowl to

  11. sprinkle the dry ingredients into the wet ingredients

  12. bowl while constantly stirring.

  13. Gently fold in the egg whites.

  14. Place a saucepan on the stovetop and turn burner on

  15. to medium high. Add 1 tsp of butter to grease the pan.

  16. Use a cup measure to scoop 1/4 of a cup of batter

  17. into the pan to form a large circle.

  18. Cook on one side until pancake starts to bubble on

  19. the top, then flip. Cook on the other side for 3 - 4

  20. minutes or until done.

  21. Top pancakes with real maple syrup if desired
