We've swapped black beans and quinoa for pasta in a traditional pasta salad recipe to add protein and fiber. This salad is hearty enough to be elevated to main dish status, and can easily me made ahead for parties and picnics.

Recipe Ingredients for daily burn black bean quinoa salad

2/3 cups Quinoa, uncooked
1/2 cups Black Beans, Organic
1/4 cup Scallions, diced
1/2 cup Corn
1 pepper whole Jalapeno
1/2 cup Balsamic Vinaigrette Dressing
1 whole Red pepper, diced
1 whole Tomato, diced

Recipe Directions for daily burn black bean quinoa salad

  1. Prepare all vegetables by washing and dicing, then

  2. set aside.

  3. Add 1.5 cups of water to a saucepan and bring to a

  4. boil over high heat.

  5. Add dry quinoa to boiling water and cook for 20

  6. minutes at medium high heat. You will know that the

  7. quinoa is done because the center will have a

  8. translucent ring around it and a short curly white

  9. "tail" can be seen around the outside of the seed.

  10. Drain any excess water and add canned, drained

  11. black beans.

  12. Let mixture cool, cover, and let chill in the

  13. refrigerator for as little as an hour or as long as

  14. overnight.

  15. Add diced vegetables to quinoa and black beans and

  16. stir.

  17. Pour dressing into mixture and coat thoroughly.
