Recipe Ingredients for Dahl Makhani

1 cup lentils (whole urad)
1/3 cup kidney beans, dried
4 cups water
1 tablespoon ginger, grated
1/2 teaspoon salt
1 teaspoon turmeric
3 tablespoons grapeseed oil
1/2 onion, chopped
3 cloves garlic
1 tablespoon ginger, grated
1 teaspoon cumin, ground
1/2 teaspoon coriander, ground
1 teaspoon chili flakes
3 medium tomatoes, chopped
1/2 teaspoon garam masala
2 tablespoons cilantro, chopped

Recipe Directions for Dahl Makhani

  1. Wash and soak beans and urad lentils 3-4 hours or overnight. Throw out that water, rinse the beans, put them in saucepan or pot with water to cover, put on high heat on stove and boil for 10 minutes. Drain and rinse. Put in slow cooker with the 4 cups water, ginger, salt, and turmeric. Leave on low for 6-7 hours.

  2. For the tarka, heat butter in frying pan, add minced garlic and grated ginger. Cook gently for about 1-2 minutes, then add cumin, coriander, and chillies. Cook for another 1-2 minutes, then add chopped tomatoes. Cook until they break down, and some of the liquid evaporates. Turn heat off. Add yogurt, garam masala, and cream. Stir in well. Add chopped cilantro and stir. Then, pour all into the beans in the slow cooker, stir, and keep on low for another hour, to let the flavours blend. If the mixture appears too thick, you can add a little more water.

  3. Serve with rice and/or chapattis.
