A spicy, Indian-style vegetarian curry.

Recipe Ingredients for Dahl Curry

2 tbsp olive oil
2 tbsp curry powder
1 medium onion, chopped
2 cloves garlic, minced
2 cups red lentils
6 cups water
1 vegetable bouillon cubes
1 medium tomato
2 tbsp lemon juice

Recipe Directions for Dahl Curry

  1. Heat oil over medium heat add curry powder (more or less to taste) 1/2 onion and garlic. Saute until the curry powder becomes very fragrant.

  2. Add water lentils and bouillon cube, raise heat to medium-high and stir frequently until curry begins to boil.

  3. Lower heat and simmer until lentils begin to break down, creating into a thick curry. Adjust flavor with salt, and to make more spicy add cayenne pepper to taste.

  4. Combine the other 1/2 onion, tomato and lemon juice. Flavor with fresh herbs, such as parsley or basil.

  5. Serve curry over rice and garnish with onion and tomato mixture.
