A traditional Indian dahl with carrots and cauliflower werved on a bed of basmati rice.

Recipe Ingredients for Dahl with Carrot and Cauliflower

3 tbsp Peanut Oil, Unrefined
1 medium (2-1/2" dia) Onions
2 carrot (7-1/2") Carrots
4 clove Garlic
1 tbsp Ginger, Ground
1.5 tsp Spices Ground Coriander
1.5 teaspoon Cumin, Ground
1 tsp Turmeric, Ground
0.75 tsp Cinnamon, Ground
0.75 tsp Chili Powder
2 cup Cauliflower
12 oz Lentils
14 oz Tomatoes Diced
1.5 cup Coconut Milk
1.5 cup Chicken Stock
2 cup Rice Basmati
0.5 lemon yields Lemon Juice

Recipe Directions for Dahl with Carrot and Cauliflower

Heat oil in large saucepan over meduim heat and cook onions and carrots, stirrin occationally until softened. Add the garlic, ginger, coriander, cumin, tumeric, cinnamon and chili powder, cook stiring for 1 minute. Add cauliflower and lentils, stir to coat. Add tomatoes, coconut milk, stock and bring to a boil and cover with a lid. Reduce heat to medium and simmer for 20 min stirring occationally. While the dahl simmers, bring 3 cups of water to a boil in a saucepan. Stir in the rice and keep stirring until the water returns to a boil. cover and reduce heat to very low and simmer gently for 15 min. Remove the dahl from the heat, stir in the lemon juice, serve over rice.
