Dad's Vegetarian Chili - modified

Recipe Ingredients for Dad's Vegetarian Chili

1 cup Onions (one large onion, diced)
14 oz tomatoes
1 cup red pepper (diced)
1 cup green pepper (diced)
3 cloves minced garlic
2 serving Jalape?o peppers
2 tbl Olive oil
15 oz Black Beans
15 oz Red Kidney beans
1 cup lentils
2 tbl Chili powder (Mexican style)
1 1/2 tsp Cumin (ground)
1 tsp Salt
1/2 tsp Black pepper (ground)
1/2 tsp Red Pepper (crushed)
60 tsp Vegetable Broth
1/4 cup Cilantro

Recipe Directions for Dad's Vegetarian Chili

  1. Heat pan and add olive oil (on #5 heat level, medium)

  2. 2. Add ingredients one at a time

  3. onions (saut? until clear) then add minced Garlic

  4. red peppers

  5. green peppers

  6. zucchini, eggplant

  7. Jalape?o peppers (diced)

  8. 3. Saut? for a few minutes until soft

  9. 4. Add beans, tomatoes and corn

  10. 5. Add 2 14 0z cans of Vegetable stock or water

  11. 6. Add spices and herbs (simmer for 30 minutes)
