Recipe Ingredients for Dad's Stuffed Peppers

4 green bell peppers
1 tsp salt
1 medium onion, peeled and chopped
1 clove garlic, peeled and chopped
1 lb lean ground beef
1 1/2 cup rice, cooked
1 cup tomatoes, chopped
1 tsp oregano, dried
1 tsp black pepper
1/2 cup ketchup
1/2 tsp Worcestershire sauce
1/4 tsp hot sauce
2 spray cooking spray

Recipe Directions for Dad's Stuffed Peppers

  1. Bring a large pot of water to boil over high heat. Meanwhile, cut tops off of peppers, 1 inch from the stem end, and remove the seeds. Add salt to water and then add the peppers. Boil until peppers turn a brilliant green and their flesh is slightly softened, about 3 minutes. Drain and set aside to cool.

  2. Preheat oven to 350 degrees. Heat pan with a spray of cooking spray over medium heat. Add onions and garlic and cook, stirring often, until soft and translucent, about 5 minutes. Add beef and brown. Drain. Remove skillet from heat, add meat, rice, tomatoes, oregano, onions, garlic, and pepper and stir well.

  3. Spray inside of bell peppers with a quick spray and then arrange cut side up in a baking dish. Stuff peppers with filling. Combine ketchup, worcestershire sauce, hot sauce and 1/4 cup of water in a small bowl. Spoon over filling. Add 1/4 cup of water to the baking dish. Place in oven and bake for 40 - 5 minutes or until the internal temperature of the stuffed peppers is 150 - 160 degrees.
