Homade marinara using roasted garlic, tomatoes, and zucchini

Recipe Ingredients for Dad's Roasted Vegetable Marinara

8 cup Tomatoes, Red, Ripe
8 oz Mushrooms, Brown, Italian, Or Crimini
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 medium raw Onion Red
6 medium raw Tomato Roma
1/4 cup leaves, whole Basil, Fresh
1 tablespoon Oregano
1/2 teaspoon Thyme
1/4 tsp Pepper, Black
1/2 tsp Sea Salt

Recipe Directions for Dad's Roasted Vegetable Marinara

  1. Preheat oven too 400, I use convection roast setting on my oven. Put one tablespoon of olive oil in a sheet pan cut the Garlic head in half and place on sheet pan. Cut the roma tomatoes in half and seed, place these on the pan. Cut the zucchini into large slices and place on pan. Sprinkle the vegetables with another tablespoon of olive oil. salt and pepper veggies and roast for 30 minutes. remove from oven and cool. Remove garlic from skin and chop finely. Remove skins from tomatoes and chop. Chop zucchini to desired size. If you have children like mine this means small so they dont know it's there!

  2. Meanwhile, dice the red onion. In a large sauce pan add the remaining olive oil(1/4 cup) and heat over medium heat. Add onion and sweat for 2-3 minutes. Add roasted garlic to pan. cook until onions are soft. Slice and add the crimini mushrooms. Saute until soft. blend the canned tomatoes to desired consistency. I use home canned two quarts. I blend them bacause of my kids, not a fan of chunky tomatoes! Add tomatoes to sauce. Add the roasted tomatoes and zucchini to pan. add the rest of the seasonings. Cover the pan and bring to a boil. Reduce heat and simmer for1 - 2 hours. Remove lid and reduce to desired thickness.

  3. Serve with your favorite pasta!
