My dad's simple recipe for pickled eggs. One serving is 2 eggs.

Recipe Ingredients for Dad's Pickled Eggs

24 eggs, hard-boiled, large
46 1/2 oz beets
1/2 cup sugar
1/4 cup vinegar, white

Recipe Directions for Dad's Pickled Eggs

  1. Heat an empty saucepan over medium heat. Using a strainer, pour beet juice into the saucepan. Add sugar and vinegar. Once sugar is dissolved and liquid is at a low boil, re-add beets and bring again to a low boil. Turn off burner and cover.

  2. Put peeled, hard-boiled eggs in a large bowl. Spoon beets and juice over eggs. Allow to cool and refrigerate.
