Dad's Lasagna Recipe

a lovely lasagna that my father taught me to make. this is also quite good with vegetables. thin strips of zucchini may be substituted for some of the noodles for a lower-cal variation.

Recipe Ingredients for Dad's Lasagna

16 7/10 ounces lasagna noodles
1 tbsp olive oil
51 1/5 ounces peeled tomato
3 1/2 cups marinara
1 large onion
2 eggs
2 cups skim ricotta
1 3/10 cups mozzarella

Recipe Directions for Dad's Lasagna

  1. boil lasagna noodles for about 2 minutes, or until ever-so-slightly cooked (firmer than al dente, slightly softer than dry)

  2. mix the tomatoes and the marinara sauce in one bowl and the ricotta, beaten eggs, and chopped onion in another. set aside.

  3. lightly oil a medium-sized pan and cover with a thin layer of tomato juice from the peeled tomatoes.

  4. arrange 1/5 of the lasagna noodles to cover bottom of pan.

  5. cover with 1/3 of the tomato mixture. be sure to cover noodles thoroughly lest the next layer stick.

  6. add another layer of noodles and cover with 1/2 of the ricotta mixture.

  7. repeat steps 4 and 5. add a final layer of noodles. add the remaining tomato mixture and top with thinly sliced strips of mozzarella, which will form a nice crust. you may modify this layer to include feta or omit it, if desired, for a lower-cal recipe.

  8. cook for 20 minutes at 400 F or until mozzarella is lightly browned. let cool a bit and enjoy!
