A Middle Eastern lentil curry with veal chops

Recipe Ingredients for Daal with veal

1 Serving Lentils
1 kg Veal Rib Chop
3 tbs canola oil
1 tsp cinnamon
2 g cardamom
2 onions, chopped
1/2 tbs ginger paste
1 tbs garlic, paste
1 tsp cumin powder
1/2 tsp turmeric powder
1 tsp Chilli Powder
1 tsp garam masala
4 large tomatoes, chopped tomatoes
3 cups water
58 g lemons, whole and dried - optional
2 tbs coriander leaves, chopped finely
2 tbs dill leaves, chopped finely
1 tsp Salt

Recipe Directions for Daal with veal

  1. Heat the cooking oil in a deep pan (on medium heat). When hot, add the add the onions and fry (stirring often) till they begin to turn pale golden in color.

  2. Now add the ginger and garlic pastes and fry for a minute.

  3. Next, add all the dry spices and fry till the oil separates from the masala. Stir often to prevent the masala from sticking to the vessel and burning.

  4. Add the tomatoes and fry for 2-3 minutes, stirring often.

  5. Now add the lamb, salt to taste and stir well. Fry till browned.

  6. Next add the lentils to the pot. Stir well.

  7. Add 3 cups of water and the dried lemons.

  8. If you are using a pressure cooker, this is the time to put on the lid and cook till you have heard 3 whistles.

  9. Remove the lid as per manual, the daal/ lentils should be done by now.

  10. If using a pot to cook the Daal; you need to let the lentils come to a boil after adding the water and then simmer, cover the pot and cook till the veal & lentils are soft. The consistency of the lentils needs to be like thick porridge so keep checking to see if you need to add more water. Stir every so often and be sure the bottom doesn't burn. Add hot water as required, to maintain the right consistency.

  11. Once cooked, add the, corriander leaves & dill for a final 3mins.

  12. Then if you oppted not to use the dried lemon you may add lime juice to taste.

  13. May be served with steamed rice, nan or any other flat bread.
