Pancakes made with spelt and rice flour. This can also be made by using just rice flour.

Recipe Ingredients for Cyndee's Pancakes

1 cup spelt flour
1 cup brown rice flour
2 tbsp sugar
4 tsp baking powder
1/2 tsp salt
2 eggs
2 cups soy milk
4 tbsp vegetable oil
2 tsp vanilla

Recipe Directions for Cyndee's Pancakes

  1. Combined all dry ingredients, make well in center.

  2. Combined all wet ingredients, mix well. add all at once to dry ingredients and mix until moist, should be lumpy.

  3. cook on a 350 degree griddle. makes 24 3 inch pancakes.
