Recipe Ingredients for Custard

1 1/2 c whole milk
1 1/2 c heavy cream
1/2 c sugar
1 pinch salt
4 egg yolks
2 tsp vanilla

Recipe Directions for Custard

  1. Pour whole milk and 1 c cream into small saucepan. Heat over medium for 6 minutes, stirring with a spoon. Do not boil.

  2. In bowl, mix egg yolks, sugar and salt. Pour remaining 1/2 c of cream into bowl and whisk.

  3. Pour egg mix into large saucepan. Pour hot milk into egg mix while whisking.

  4. Heat ovr medium for 10 minutes, or until mixture is thick enough to coat back of spoon. Do not boil.

  5. Strain into small bowl. Mix in vanilla.

  6. Place small bowl in larger bowl filled with ice and water. Cover milk with plastic wrap to prevent a skin forming on top. Place in fridge for 3-24 hours.

  7. When chilled, pour into ice cream maker. Add extras once thick. Chill for 8 hours.
