A spicy Salvadoran slaw traditionally served with pupusas.

Recipe Ingredients for Curtido

1/2 head cabbage, shredded
1 carrot, grated
3 scallions, minced
1/2 cup water
1/2 cup white vinegar
1/2 cup apple cider vinegar
1 serrano pepper, minced
1/2 tsp. salt

Recipe Directions for Curtido

  1. In a heat-proof bowl, place shredded cabbage and carrots. Blanch for 5 minutes with about 4 cups of boiling water, then drain.

  2. Add the remaining ingredients.

  3. May be served room temperature or chilled.

  4. Jalapenos may be substituted for the serrano peppers.
