Curried chicken with Caribbean flavors and peppers.

Recipe Ingredients for Curryied Chicken with Bell Peppers

15 oz chicken breasts
2 tsp olive oil
1 onion
1 tsp garlic
1 tsp curry
1/2 tsp cumin
1/2 tsp coriander
1/4 tsp sea salt
1 cup chicken broth
1/2 tsp black pepper
2 green bell peppers
1 red bell pepper
1 tsp corn starch

Recipe Directions for Curryied Chicken with Bell Peppers

  1. Slice 3 chicken breasts into strips, then, brown in 1-2 tsp olive oil with the sliced up onion (1/4" rings)

  2. Add: garlic, curry (I live in Florida, so I use Jamaican curry), cumin, coriander, sea salt to taste with 1 cup water or 1 cup of chicken broth and black pepper to taste.

  3. Simmer the chicken while cutting up:

  4. 2 green bell peppers

  5. 1 red bell pepper

  6. Put the peppers in with the chicken about 20 minutes before you plan to serve the chicken and peppers over the rice.

  7. If the chicken sauce needs thickening then just before serving I mix 1 tsp of cornstarch into 1 Tbsp of water and then add it to the chicken mixture when it's at a full boil. I turn off the heat and stir constantly until it thickens - about a minute.

  8. (I've also used broccoli instead of the peppers, but broccoli only needs about 8 minutes to cook. I've also tossed matchstick carrots on top as a garnish when I use broccoli.)
