yummy soup looks terrible when cooked but is really tasty... add as much curry powder as you want, i like lots

Recipe Ingredients for curry vegie soup

2 cups borlotti beans
1/2 cup zucchini
1/2 cup red cabbage
1 cup carrot
1 cup sweet potato
1/2 cup celery
1 onion
2 tsp curry powder
1 cup pumpkin
7 cups water
1 salt
1 pepper
3 tsp chicken stock
1 tblsp olive oil

Recipe Directions for curry vegie soup

  1. fry curry powder in a little oil

  2. Add onions, fry for just a minuite

  3. Add rest of chopped up vegies and fry also for a couple of mins, mixing in with the curry powder.

  4. Add the water

  5. Add the stock

  6. Simmer for about 3/4 hour

  7. season with salt and pepper
