Recipe Ingredients for Curry Vegetable Stew

3 tablespoons vegetable oil
1 medium onion, diced
1 tablespoon garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1 1/2 teaspoons curry powder
1/2 teaspoon allspice
1/2 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups water
15 oz tomatoes, diced
15 oz potatoes, sliced
15 oz green beans
15 oz garbanzo beans
4 ounces cashews
1/3 cup raisins

Recipe Directions for Curry Vegetable Stew

  1. Brown onion and garlic in olive oil.

  2. Add remaining ingredients and simmer 1/2 -1 hour. Enjoy over rice or couscous.
