Curry Vegetable Soup Recipe

Recipe Ingredients for curry vegetable soup

2 cups skim milk
4 cups chopped cauliflower
2 bouillon cubes
2 tbsp curry powder
2 tbsp whole wheat flour
2 tbsp vegetable oil
1 cup chopped carrots
1/2 cup chopped mushrooms
3 1/2 cups water

Recipe Directions for curry vegetable soup

  1. Beforehand: steam or boil 2 to 3 cups cauliflower. (You'll want to chop your mushrooms and green pepper at this point, too.)

  2. Make the roux:

  3. 2 Tbsp olive oil

  4. small amount of chopped onion

  5. 2 Tbsp flour

  6. 1 tsp curry powder (more to taste)

  7. salt and pepper to taste

  8. Mix all of this over medium heat to form a paste.

  9. Add the steamed cauliflower, mushrooms, and peppers to 1 1/2 cups of vegetable broth (make this by boiling 3 cups of water and adding 1 1/2 cubes of bouillon. Set aside the other 1 1/2 cup of broth). Put the vegetables and broth in a blender and puree. If you haven't got a blender, just cut them up smallishly.

  10. Slowly add a cup of soy milk to the roux, then add the veggie puree, then add the rest of the broth. Let is come to a boil and boil for a minute or two. Then you can eat some and freeze the rest.
