You can substitute chopped chicken breast in this lighter version of a classic favorite.

Recipe Ingredients for Curry Turkey Salad

12 oz turkey breast
1/4 cup dried cranberries
1/4 cup walnuts
1 tbsp mayonaise
1 tbsp dijon mustard
1 tsp curry powder

Recipe Directions for Curry Turkey Salad

Chop leftover turkey into small chunks. Place in medium size bowl. Add cranberries, walnuts, mayonaise, mustard and curry powder. Salt and pepper to taste. Place in fridge for at least one hour to allow flavors to meld. Serve cold over a bed of lettuce with sliced fresh melon or assorted fruit for a summer treat!
