A very light and mellow curry soup with rice and exceptionally low sodium. A generous helping of Balsamic Vinegar and various flavorful spices make up for the lack of salt in this watery bean based soup.

Recipe Ingredients for Curry Soup with Rice

1 Can Chick Peas
2 cup(205 g) Rice, White, Short-grain
8 oz Tomato Paste
3/4 medium White Onion
10 clove Garlic
5 serving Balsamic Vinegar
2 tbsp Olive Oil
2 cup Sweet Peas
2 cup (8 fl oz) Water
1 tbsp Dill Weed, Dried
1 serving Cayenne Pepper
1 tsp Pepper, Red Or Cayenne
1 tbsp Pepper, Black
1 tbsp Garlic Powder
1 tbsp Onion Powder
2 tbsp Curry Powder
1 tsp Rosemary, Dried

Recipe Directions for Curry Soup with Rice

  1. Cook 2 cups of rice in a rice maker.

  2. Heat olive oil in a pan until hot.

  3. Chop the onions, add to them to the pan and cook until slightly clear.

  4. Add the garlic and brown in the pan.

  5. Add all the ingredients to a crockpot including the rice and water and stir well.

  6. Let cook on high for 5 hours or until the chickpeas are soft enough to eat.
