Recipe Ingredients for Curry Soup

1 pound skinless, boneless chicken breast, cut into bite-sized chunks
1 medium yellow onion
1 cup peeled potatoes, cut in 1-inch chunks
1 cup carrots
9 ounce frozen baby lima beans
3 ounces diced tomatoes
1 cup canned coconut milk
1 cup fat-free, reduced-sodium chicken broth
1 tablespoon cumin
1 tablespoon curry powder
1/4 teaspoon Tabasco
1 Parsley or cilantro for garnish

Recipe Directions for Curry Soup

Bring to boil, then simmer everything together for a few hours.
