Recipe Ingredients for Curry Sauce

1 medium onion, chopped
1 tablespoon butter
1/2 cup white wine
1/2 teaspoon salt
1/8 teaspoon pepper
3 teaspoons curry powder
1 tablespoon flour
1 1/2 cups vegetable broth
13.66 ounce Coconut Milk
1 cup peas, frozen
1 cup carrots, shreadded

Recipe Directions for Curry Sauce

  1. Place onion, butter, wine, salt and pepper into a pan

  2. simmer covered for 4-5 minutes

  3. remove cover and cook until wine is syrupy

  4. whisk in curry powder and flour, cook for 3 minutes

  5. add broth all at once and whisk together

  6. Simmer for 25 minutes

  7. Stir in coconut milk, peas and carrots

  8. Heat through and serve over rice
