Recipe Ingredients for Curry Roasted Pumpkin

5 lb pumpkin
1 1/2 tsp curry
1 1/2 tsp cumin
1 tsp sea salt
1/3 cup olive oil

Recipe Directions for Curry Roasted Pumpkin

  1. Deseed pumpkin, remove strings, cut into large chunks and lay them in a roasting pan flesh-side up, skin-side down.

  2. In a measuring cup, combine oil with spices.

  3. Use a basting brush to brush mixture all over pumpkin flesh

  4. Fill roasting pan with 1/3 c water, cover in foil, and roast at 450 degrees for an hour or until pumpkin flesh is tender.

  5. Scoop pumpkin flesh into food processor (or blender) and puree.
