Yummy cold salad. You can substitute most any veggie or nut.

Recipe Ingredients for Curry quinoa salad

210 grams quinoa
1 tblsp olive oil
1 tblsp curry powder
1 cup cucumber
1 cup red bell pepper
1 small onion
4 tblsp fresh basil
2 oz pecans
1/3 cup avacado
2 tblsp lime juice
1 tsp salt
1 tsp garlic powder
1 pepper to taste

Recipe Directions for Curry quinoa salad

  1. fix quinoa according to box (1 cup dry).

  2. chop/dice all veggies and nuts and put in large bowl.

  3. Add cooked quinoa on top of veggies ect.. and let the heat warm the veggies for 3 min.

  4. Add rest of ingredients and fold to mix.
