Recipe Ingredients for Curry Pumpkin Soup

29 oz Pumpkin
5 serving Lite Coconut Milk
1 medium raw Onion Red
4 pieces Garlic Cloves
1 tbsp Extra Virgin Olive Oil
4 tsp Curry Powder
1 tsp Cumin
1 tbsp Vinegar, Cider
1 tsp Chicken Stock

Recipe Directions for Curry Pumpkin Soup

  1. Saute onions and garlic in olive oil.

  2. Add whole can of pumpkin, coconut milk, chicken stock with a splash of water. Add more water if you want a thinner consistency. Bring to a lite boil, lower heat and simmer.

  3. Season to taste with curry powder, cumin, garlic powder, and S and P.

  4. Add a splash of acv and sriracha to taste.
