Curry Potato Vegetable Soup Recipe

This is not vegetarian, however, you could easily substitute vegetable broth for the chicken broth to make it so. This is a light, earthy and slightly spicy soup. I use the two different curries because I use hot madras curry powder for extra spice. You can use regular curry powder.

Recipe Ingredients for Curry Potato Vegetable Soup

2 lbs yukon gold potatoes, peeled & cubed (3/4" cubes)
2 large carrots, peeled & sliced
2 celery stalks, sliced
1 1/2 cups button mushrooms, quartered
1/2 cup diced bell pepper, red or green
3 tbsp chopped shallots
2 cloves garlic, minced
3 cups low-sodium chicken broth
1 1/2 cups water
1/4 cup unsalted butter
1/3 cup coconut milk
1 tsp curry paste
2 tsp curry powder (preferably Madras curry)
1 1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder

Recipe Directions for Curry Potato Vegetable Soup

  1. Melt the butter in a large pot over medium-high heat. Add carrots, celery, mushrooms, bell peppers, shallots, garlic powder, and black pepper to pot. Stirring occasionally, saute until shallots are soft and translucent. Add potatoes and garlic and saute for another minute. Add curry paste and powder and saute for another couple of minutes. Stir in broth, water, coconut milk, and salt.

  2. Let simmer on medium-high heat for 25-30 minutes. Serve hot.

  3. Optional: Mix in a 1/2 cup of cooked basmati rice per serving.
