Recipe Ingredients for Curry Potato Soup

2 tsp Curry Powder
1 large Onions
1 tbsp Olive Oil
1 cup, chopped Broccoli
3 clove Garlic
3 cup Stock
1 potato medium (2-1/4" to 3-1/4" dia.) Potato, Baked, Flesh And Skin
3 stalk, medium (7-1/2" - 8" long) Celery

Recipe Directions for Curry Potato Soup

  1. 1 tablespoons olive oil

  2. 1 onion, diced

  3. 3 cloves garlic, chopped

  4. 1 cup broccoli florets

  5. 3 stalks celery, chopped

  6. 1 baking potato

  7. 3 cups vegetable broth

  8. 2 teaspoons curry powder

  9. Heat the oil in a stock pot over medium heat. Add the onion, garlic, broccoli and celery; cook and stir until tender. Meanwhile, peel the potato and heat in the microwave for 5 to 10 minutes, or until tender. Transfer the potato and vegetables to a food processor and blend with stock until smooth. Return to the pot and bring to a boil.

  10. Add the curry powder.
