A spicy curry sauce to serve over cous cous or with pita bread.

Recipe Ingredients for Curry Potato Sauce

4 small red potatoes, finely diced
14 ounce coconut milk
1/4 tsp. red curry paste
1/4 tsp. ground turmeric
1/4 tsp. curry powder
1/2 tsp. marjoram, dried

Recipe Directions for Curry Potato Sauce

  1. Heat coconut, diced potatoes and spices in a medium sauce pan on high heat. Bring to a boil.

  2. Reduce heat, cover and simmer until potatoes are tender, 15-20 minutes.

  3. Serve over cous cous or with pita bread.
