quick and easy. For a vegetarian option remove chicken and use vegetable broth.

Recipe Ingredients for curry pasta

12 oz chicken breasts
8 oz uncooked spaghetti
1 tbsp olive oil
1 medium onion, chopped
1 pound frozen mixed vegetables, thawed
1 tbsp curry powder
1/2 cup fat-free chicken broth, reduced-sodium
2/3 cup low-fat plain yogurt
1/4 cup cilantro, fresh, chopped
2 medium green onions

Recipe Directions for curry pasta

  1. cook pasta.

  2. brown chicken in oil, saute onion and frozen vegetables in same pan, add curry powder, after 20 seconds add chicken broth making sure to grab all brown bits from bottom of pan and yogurt bring mixture to low simmer.

  3. Stir in cooked spaghetti, cillantro and scallions serve immediately.
